About Red Snapper
Red Snapper — Chempalli in Malayalam, Rane along parts of the Konkan coast — is one of the most visually striking fish you can put on a table. Vermillion-red-skinned, silver-lined, firm-fleshed and sweetly-flavoured, it is the fish restaurants build a "whole-roast" menu around. And that is exactly how we recommend eating it: whole, scored, marinated, and cooked over intense heat.
The flesh is white, dense, mildly sweet — much closer to Snapper family than to a coastal Bangude — and it holds together in slices, chunks, and steaks. It is the fish for a Goan reachado, a coastal green masala, or a whole tandoor roast. Its skin, when scored and seared, crisps to a beautiful chip-like layer that most seafood eaters count as the best part.
Red Snapper is subject to daily market availability. Its bright colour makes freshness easy to spot: if the skin is dull or the eyes are cloudy, we do not accept the fish. What ships out of our packing station is only what passes that test.
Cuts we offer
- Whole fish, scored — for a full-roast centrepiece
- Fillets, skin-on — for pan-sear with crisp skin
- Steaks — for a coastal curry
How to cook Red Snapper
Whole-roast is the Red Snapper preparation to serve at a dinner: score the fish deep both sides, rub in a green marinade of coriander, mint, ginger, garlic, green chilli, cumin, salt and a squeeze of lime, rest for 30 minutes, and roast in a very hot oven at 240°C for 18–22 minutes. The scored skin blisters, crisps and turns a dark red-gold. For a Goan reachado, slit the whole fish along both sides and stuff the vinegary red masala pocket-style before pan-frying. For fillets, a simple pan-sear skin-down for 4 minutes, flip for 30 seconds, done.
How we deliver it fresh
We source from the coast in the morning, chill it on ice for the drive to Bengaluru and pack it hygienically before it leaves for your door in KR Puram, Whitefield, Marathahalli or the surrounding areas. Nothing here is frozen for days on end and nothing here is chemically treated — the only preservation is temperature. If you order in the morning we deliver the same day; if you order later, we schedule you into the next available slot on WhatsApp before we pack.
Frequently asked about Red Snapper
What size Red Snapper should I order?
For a family of 4, a 1–1.2 kg whole fish is perfect. For 2 people ordering steaks or fillets, 500g is enough.
Do you score and marinate on request?
Yes. Tell us the preparation you have in mind on WhatsApp — whole-roast, reachado, tandoor — and we score and prep the fish before it leaves.
How red should a fresh Red Snapper be?
Vividly red-scaled. As the fish ages, the red fades to pale pink and eventually a lifeless grey. Our rule: no bright red, no delivery.
