About Sardines
Sardines — Mathi in Kerala, Chala in coastal Karnataka, Noolu in Tamil, Bhing in parts of Maharashtra — are the tiny silver-blue fish that punch far above their weight. Small, oily, cleanly bony — sardines are one of the most affordable and nutritionally rich seafoods you can put on a plate.
The flavour is unmistakably ocean-forward — bright, briny, faintly sweet, with a rich dark meat that soaks up chilli and tamarind masala the way no other fish does. In Kerala, mathi curry is a Sunday ritual. In coastal Karnataka, sardines are grilled on a hot stone with a red chilli rub. In Konkani homes, they are pan-fried with rice flour and coconut oil for a rainy weekday lunch.
Sardines are the fastest-spoiling fish in our catalogue — their high oil content oxidises quickly and freshness is everything. We source them when the day's landing is same-morning fresh, chill them aggressively on ice, and pack in small quantities to move fast.
Cuts we offer
- Whole fish, gilled and gutted
- Butterflied, deboned — for the classic mathi fry
- Pickle-cut — for a Konkani sardine pickle
How to cook Sardines
The Kerala mathi curry is the definitive sardine preparation: red chilli-and-shallot masala, thick coconut milk, kudampuli (Malabar tamarind), curry leaves, and the sardines added in only for the final 6 minutes. The dark meat drinks the masala. For a Mangalorean-style pan fry, marinate the gutted sardines in red chilli, turmeric, ginger-garlic, salt and a spoon of rice flour, and shallow-fry in coconut oil for 90 seconds a side — no more. For a smoky char, thread the whole sardines on a skewer and grill over live coals for 3–4 minutes.
How we deliver it fresh
We source from the coast in the morning, chill it on ice for the drive to Bengaluru and pack it hygienically before it leaves for your door in KR Puram, Whitefield, Marathahalli or the surrounding areas. Nothing here is frozen for days on end and nothing here is chemically treated — the only preservation is temperature. If you order in the morning we deliver the same day; if you order later, we schedule you into the next available slot on WhatsApp before we pack.
Frequently asked about Sardines
How fresh will the sardines be?
Sardines are cooked and eaten same-day, ideally within hours of delivery. We only source them from the morning's landing and refuse anything older.
What is the minimum I can order?
Sardines are usually ordered by weight, minimum 500g. That is roughly 12–18 fish depending on the day's size.
Are they deboned before delivery?
By default, no. On request, we butterfly-cut and debone them for the classic fry. Mention it on WhatsApp.
