About Country Chicken (Naati)
Country chicken — Naati Koli in Karnataka, Desi Murgi in Hindi-belt homes — is the free-range, slow-grown, heritage-breed bird that older generations remember and younger generations rediscover. Unlike the fast-grown broiler that dominates the modern chicken market, Country chicken lives longer, moves more, and develops more muscle — which is exactly what gives it its firm, lean flesh and its deep, gamey, unmistakable flavour.
The meat is darker, denser, and needs a slightly longer cook than broiler chicken. It is what a traditional Naati Koli saaru is built on: a slow-simmered coconut, coriander and pepper masala that mirrors the depth of the bird itself. In North Indian kitchens, Desi Murgi bhuna and Desi Murgi curry are Sunday-lunch staples, and the flavour justifies the extra half-hour of cooking time.
Country chicken is subject to daily availability from the supplier. Because it is slower to grow, supply is not endless — we take honest confirmation calls on WhatsApp before we commit to sourcing.
Cuts we offer
- Whole bird (average 1.3–1.6 kg)
- Curry-cut (12 pieces)
- 8-piece cut — for saaru and bhuna
How to cook Country Chicken (Naati)
Naati Koli saaru is the definitive Karnataka preparation: dry-roast coriander, red chilli, black pepper, cumin, coconut and cinnamon, grind to a paste, cook the country chicken in it with tamarind and onion for 45–55 minutes on low heat. The flesh soaks up the masala and stays firm. For a North Indian Desi Murgi bhuna, cook the pieces slowly in a heavy onion-tomato-ginger-garlic masala with garam masala, black cumin and kasuri methi for 40 minutes covered, then finish on high heat for the last 5 minutes to bhuna the masala.
How we deliver it fresh
We source from the coast in the morning, chill it on ice for the drive to Bengaluru and pack it hygienically before it leaves for your door in KR Puram, Whitefield, Marathahalli or the surrounding areas. Nothing here is frozen for days on end and nothing here is chemically treated — the only preservation is temperature. If you order in the morning we deliver the same day; if you order later, we schedule you into the next available slot on WhatsApp before we pack.
Frequently asked about Country Chicken (Naati)
How is country chicken different from broiler?
Country chicken is free-range and slower-grown — the flesh is firmer, darker, gamier, and takes 45+ minutes to cook. Broiler chicken is faster-grown and more tender, and cooks in 20–25 minutes.
Is it halal?
Our poultry is sourced from a supplier who follows halal slaughter and processing standards. Please ask us on WhatsApp if you want a copy of the current certificate before ordering.
How long should I marinate and cook it?
Marinate at least 4 hours (overnight is better) and cook at least 45 minutes on low heat. Country chicken rewards patience.
