About Mutton
Mutton in India means goat — Bakre ka Gosht — and getting good goat is a matter of the animal, the cut, and the freshness. We source fresh goat meat from a supplier who follows halal standards and runs same-day processing, and we deliver it strictly on pre-book so what reaches you is the day's fresh cut, not something that has been sitting in a chill room.
Goat meat is a lean, mineral-rich, deeply-flavoured red meat — significantly lower in fat than lamb, higher in iron and B12, and unmistakable in taste. Culinarily, mutton is the anchor of a proper Sunday biryani, a slow-cooked rogan josh, a Kolhapuri mutton curry, a Kerala erachi ularthiyathu, or a nihari that simmers for six hours.
Because goat requires a longer cook than chicken and rewards patience, ordering the right cut matters. A biryani wants bone-in shoulder and leg; a rogan josh wants shoulder chops; a nihari wants shank and neck bones for the collagen. Tell us on WhatsApp what you are cooking and we cut accordingly.
Cuts we offer
- Curry-cut, bone-in (mixed shoulder, leg, ribs)
- Shoulder chops
- Leg (whole or cut into pieces)
- Ribs (chaap cut)
- Boneless (leg or shoulder)
- Keema — fine or coarse mince
- Nalli (shank with marrow bone)
How to cook Mutton
A proper Sunday biryani begins with mutton pieces marinated in hung curd, kashmiri chilli, ginger-garlic, papaya paste (natural tenderiser), garam masala, kasuri methi and mustard oil overnight. Pressure-cook the marinated meat for 25 minutes, layer with 70%-cooked basmati and slow-dum for 30 minutes. For a rogan josh, brown the shoulder chops in ghee, build a yogurt-and-kashmiri-chilli gravy, and slow-cook 90 minutes. For nihari, simmer bone-in shanks for 6 hours with a masala of ginger, garlic, red chilli, garam masala and wheat-flour thickening.
How we deliver it fresh
We source from the coast in the morning, chill it on ice for the drive to Bengaluru and pack it hygienically before it leaves for your door in KR Puram, Whitefield, Marathahalli or the surrounding areas. Nothing here is frozen for days on end and nothing here is chemically treated — the only preservation is temperature. If you order in the morning we deliver the same day; if you order later, we schedule you into the next available slot on WhatsApp before we pack.
