About Lamb
Lamb — young sheep, milk-fed where the source permits — is the most tender red meat you can put on a plate. Unlike goat (which is what "mutton" means in India), lamb is younger, softer-fleshed, and mildly-flavoured. It is the meat for a Kashmiri rogan josh, a Turkish shish kebab, a Greek souvlaki, a British Sunday roast, and a Persian-style saffron pulao.
The flesh is a rich rose-pink, delicately marbled, and the fat is that unmistakable creamy lamb-fat that carries flavour like almost nothing else. Nutritionally, lamb is a strong source of iron, zinc, B12 and high-quality protein. Culinarily, it is the meat of celebration dinners across the world.
Lamb is subject to daily supply and is not always available. When it is, we tell you on WhatsApp, cut to your preference (curry, chops, roast, mince, or a full leg for a slow-roast), and pack it same-day.
Cuts we offer
- Curry-cut, bone-in
- Chops (rack cut)
- Leg (whole or cut)
- Shoulder
- Keema — fine or coarse
- Boneless leg — for slow roast
How to cook Lamb
A Kashmiri rogan josh with lamb: brown the shoulder chops in mustard oil, add a masala of kashmiri chilli, ginger-garlic, fennel powder and dry ginger, cook with yogurt for 60 minutes on low heat. For a slow-roast leg, rub with garlic, rosemary, olive oil, salt and pepper, roast at 160°C for 25 minutes per 500g. For lamb chops, marinate 15 minutes in olive oil, garlic and rosemary, sear on very high heat for 2 minutes a side, rest 5 minutes. For shish kebab, cube the shoulder, marinate in yogurt-cumin-paprika, and skewer-grill.
How we deliver it fresh
We source from the coast in the morning, chill it on ice for the drive to Bengaluru and pack it hygienically before it leaves for your door in KR Puram, Whitefield, Marathahalli or the surrounding areas. Nothing here is frozen for days on end and nothing here is chemically treated — the only preservation is temperature. If you order in the morning we deliver the same day; if you order later, we schedule you into the next available slot on WhatsApp before we pack.
Frequently asked about Lamb
Is lamb the same as mutton?
No. In India, mutton means goat meat. Lamb is young sheep — softer, milder, faster to cook, and more expensive.
Is it halal?
Our poultry is sourced from a supplier who follows halal slaughter and processing standards. Please ask us on WhatsApp if you want a copy of the current certificate before ordering.
How do I stop lamb from turning tough?
Two rules: either cook it fast on very high heat (chops, kebabs — 2 minutes a side) or cook it slow on low heat (roast, curry — 90 minutes minimum). Anywhere in between and the fibres seize.
